The Last Cheer Before the Darkness Descends.

When everyone talks about “The” scene in the Exoricist, it’s usually the Crucifix scene (iykyk) or where Father Merrin walks up to the MacNeil house. For me, it’s randomly the dinner party Chris threw before all hell breaks loose. I feel like in both the book and the movie it is that last cheerful moment, the calm before the storm. So I wanted my mocktail to be centered around this party. The best thing, the ice cubes are the most labor intensive part so please feel free to skip if you are simply not in the mood!

For the ice cubes, I made a cocounut butterfly pea jelly and poured that into my molds. Once they set, I moved the jelly into either a glass bowl for my large jellies or a muffin tin for my smaller jellies. Covered with water and put in the freezer to have my ice cubes!

While your ice cubes freeze, I made a lavender butterfly pea simple syrup. Just heat equal parts sugar and water, toss in 10 butterfly pea flowers, and about a 1/2 tablespoon of lavender (use less or more based on your tastes for this), brought to a boil then killed the heat to let it steep.

Pour your lemonade into a punch bowl, pour in your soda water, and slowly pour in the simple syrup. Taste as you go to make sure you don’t overwhelm the lemonade. Drop in your ice cubes, and enjoy!
